After two years of work and a Kickstarter campaign, Marrow, the restaurant project from Jon Kosorek of the Jon's Street Eats truck, finally opened its doors on Wednesday. The lunch-only spot has a unique philosophy: Kosorek is breaking down one whole animal sourced from a Napa farm at a time, serving only fare derived from that animal and from local farms. He's currently got a cow, but pork, lamb, and goat will also go through the rotation. The menu changes daily but is fairly simple: today's lineup included a Reuben, a patty melt, a grilled cheese, an asparagus dish with a soft-cooked egg, chipped beef on toast, beef-fat fries, and a green goddess salad. Sandwiches are $10-12, and other dishes are $3-7. Follow Marrow on Twitter to get the intel on what they're serving that day.

On the drinks side, Kosorek is offering sodas and aguas frescas, as well as Devil's Gulch coffee and Numi tea. The tiny former Looney's BBQ space is primarily designed for takeout, though there is a small amount of counter seating along the walls. Hours are currently 11 am-3 pm on weekdays, but could change; again, Twitter is your best source for the latest on what they're up to.
